Ingredients:
- 1 cup (tea) fine corn flour
- 1/2 cup (tea) water
- 1 teaspoon of salt
- 2 tablespoons of oil
- 1/2 onion
- 1/2 piece pepperoni sausage
- Green perfume to taste
Preparation method:
- In a bowl mix the corn flour with the salt.
- Add the water little by little, mixing until a moist and well-hydrated crumb forms.
- Heat the olive oil in a pan over low heat.
- Add the hydrated cornmeal to the pan and stir until smooth.
- Cover the pan and cook for 10 to 12 minutes, stirring occasionally, until the cornmeal is moist and golden.
- In a pan, heat a drizzle of olive oil and fry the diced Calabrian sausage until golden brown.
- Add the chopped onion and crushed garlic, frying for a few more minutes.
- Sprinkle with green chilli, add salt if necessary and remove from heat.
- Mix the stewed sausage with the cornmeal, stirring well to incorporate all the ingredients.
