The competition
In total, 20 samples of 70% chocolate were presented, made with cocoa produced in different parts of the country. Another peculiarity of the competition is that, obligatorily, all competing chocolates must be available on the market.
Under the coordination of Ensei Neto, columnist for Paladar, the chocolates were evaluated at the Sindicafé headquarters, in the capital of São Paulo, in two phases. In the first, a jury made up of 24 industry professionals blindly analyzed the samples and chose the finalists.

In the second phase, a gastronomic jury made up of the beer sommelière Bia Amorim, the barman Ricado Takahashi, the Japorês of the Beefbar and Song Qi restaurants, Alex Minho, author of the blog Gastronominho, and the Paladar journalist Cintia Oliveira, evaluated the finalists.
Aroma, acidity, bitterness, astringency and finish were some of the evaluation criteria. And, from the sum of the scores of the two groups, the top three classified emerged.
The competition was part of the program of the Chocolate Week Bean to Bar Brasil 2024 event, which began last weekend and brought together a fair, workshops and conferences dedicated to the theme.
