Pressure cooked meat with sauce

Ingredients:
- 3/4 cup (tea) olive oil
- 2 kg hard chopsticks (piece)
- 1kg of chopped seedless cherry tomatoes
- 2 large onions chopped
- 5 cloves of garlic
- 1 tablespoon of salt
- 4 bay leaves
- 1 chopped carrot
- Chopped parsley to taste for sprinkling
- 1/2 cup (tea) water
Preparation method:
- In a large pressure cooker, heat the oil and fry the meat until lightly browned on all sides.
- Add the other ingredients, excluding the parsley, and mix well.
- Add the water, cover the pan and cook for 50 minutes, over low heat, from when it starts to sizzle.
- Allow the pressure to release, open the pan and check if the meat is tender.
- If necessary, leave it under pressure a little longer or cook in an uncovered pan, over low heat, to finish cooking and thicken the sauce.
- If you prefer, pass the sauce through a sieve and add a little hot water to dilute some of the sauce.
- Cut the meat into slices and sprinkle it with chopped parsley. Serve.
