Sesame crusted salmon
Ingredients
- 1 salmon fillet
- Juice of 1 lemon
- 2 egg whites egg
- Salt, ground black pepper and ginger zest to taste
- 1 cup black sesame tea
- 1 cup white sesame tea
- Butter for frying
Preparation method
Remove the skin from the salmon and cut it into strips. Place it in a container and season it with salt, black pepper, lemon juice and ginger zest. Book. In separate containers, place the egg whites and sesame seeds. Next, dip the fillets in the egg whites and then in the sesame seeds. Place the fillets on a baking tray and refrigerate for 30 minutes. Salmon with olive sauce
Ingredients
- 4 salmon fillets
- 2 tablespoons of olive oil
- 1/2 cup sliced black olives
- 1/2 cup sliced green olives
- 1/2 cup fresh cream
- 1/4 glass of dry white wine
- 1 clove of minced garlic
- 1/2 onion chopped
- Zest and juice of 1 lemon
- Salt and ground black pepper to taste
- Chopped fresh parsley and chives for garnish
Preparation method
In a container, season the salmon fillets with salt, black pepper, lemon zest and juice. Leave to rest for 15 minutes to absorb the flavors. Heat a large skillet with 1 tablespoon olive oil over medium-high heat. Arrange the salmon fillets skin side down and cook for about 3-4 minutes on each side, or until golden on the outside and cooked through on the inside. Remove from pan and set aside.
In the same pan, add another tablespoon of olive oil and sauté the onion and garlic until golden and fragrant. Add the white wine and boil it for a few minutes to reduce the alcohol. Add the black and green olives, mixing well. Reduce the heat to low and add the fresh cream, stirring until you obtain a creamy sauce. Season with salt and black pepper.
Put the salmon fillets back in the pan, pour the sauce over them and cook for another 2 minutes, just to heat the fish and integrate it into the sauce. Top with chopped parsley and chives on top.
Salmon tartare
Ingredients
- 500 g skinless salmon fillet, cut into cubes
- 2 tablespoons mayonnaise
- 1 tablespoon mustard
- Zest and juice of 1 lemon
- 1 green apple chopped
- 1/2 chili pepper, seeded and chopped
- Salt, ground black pepper and olive oil to taste
Preparation method
Place the salmon, mayonnaise, mustard, lemon zest and juice and olive oil in a container and mix well. Season with salt and black pepper. Finally add the green apple and chilli pepper and mix well. Cover with aluminum foil and refrigerate for 1 hour. Remove from fridge, drizzle again with olive oil and serve immediately.

Salmon in passion fruit sauce
Ingredients
- 600 g of salmon
- Juice of 1 lemon
- Pulp 2 passion fruit
- Concentrated passion fruit juice 120 ml
- 1 1/2 tablespoons sugar
- 2 teaspoons cornstarch
- Salt and ground black pepper to taste
Preparation method
Remove the skin from salmon and cut it into strips. Arrange the fillets on a baking tray and season them with salt, black pepper and lemon juice. Cover with aluminum foil and place in a preheated oven at 200°C for 15 minutes. Meanwhile, in a pan, add the passion fruit juice and corn starch and mix. Add the passion fruit pulp, salt and sugar and mix. Cook over medium heat until boiling, stirring constantly. Turn off the heat, remove the salmon from the oven, cover it with the sauce and serve immediately.
Salmon Stroganoff
Ingredients
- 500 g of salmon cut into cubes
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic, minced
- 200g sliced fresh mushrooms
- 1/2 glass of dry white wine
- 1 cup fresh cream
- 3 tablespoons of ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and ground black pepper to taste
- Chopped parsley to finish
Preparation method
In a container, season the salmon cubes with salt and black pepper. Leave it aside for a few minutes. Then, in a large skillet, heat the butter and olive oil over medium heat. Add the salmon cubes and cook quickly until they are lightly golden on the outside; do not overcook them to avoid them becoming dry. Then remove the salmon from the pan and set it aside. In the same pan, add the onion and garlic, sautéing them until soft and fragrant. Add the mushrooms and sauté until they release the water and become golden.
Then add the white wine to the pan and let it boil for a few minutes. Add the ketchupDijon mustard and Worcestershire sauce. Mix well until you obtain a smooth sauce. Then lower the heat and add the fresh cream, stirring until the sauce becomes creamy and velvety. Season with salt and black pepper. Then return the salmon cubes to the pan, stirring gently so that they integrate with the sauce. Cook for another 2-3 minutes, just to heat the salmon. Turn off the heat and sprinkle the parsley.
