PASTA STRAWS PASTA Ingredients:
– 6 pieces of shortcrust pastry (in discs) of 10 cm diameter each
Ingredients FOR GREASING/BRUSHING:
– oil to taste
Ingredients for the Dulce de Leche filling:
– 1 can(s) of cooked condensed milk (see recipe)
– 395 g of dulce de leche, firm (use it if you don’t choose to make homemade dulce de leche) (optional)
Ingredients TO COMPLETE:
-powdered sugar to taste (optional)
PREPARATION:
- The yield of this recipe (2 portions) is 24 units of straws, prepared with 10 cm pastry discs.
- If you choose to make homemade dulce de leche, adjust the total preparation time to account for the cooking of the condensed milk.
- The dulce de leche prepared with condensed milk is denser than those purchased ready-made, making the filling firmer, but it is also possible to use an industrialized dessert, preferring the more substantial ones.
- If you prefer to prepare homemade dulce de leche: wash and remove the label from the can of condensed milk, place it in the pressure cooker, add water, 2 centimeters above, cover the pan and place on a high heat. When it starts to sizzle, reduce the heat to medium and cook for 40 minutes.
- Set aside the other ingredients and utensils needed for the recipe.
PREPARATION:
Straw Pastry Dough – Modelling:
- On a cutting board, cut each disc of dough into 4 triangles.
- Place water in a bowl and use your finger or a pastry brush to wet one side of the triangle.
- Roll out the dough, forming a cone and press the seam so that it is closed.
Straw – Cook:
- Preheat the Airfryer at 180ºC for 5 minutes.
- Brush the straws with a drizzle of oil: this helps to give crunchiness and also the color of the dough.
- Place the straws in the Airfryer basket, with the cone tip facing up, leaving a small space between them so that the air can circulate and they cook evenly. Depending on the size of your Airfryer basket, cook the straws in stages.
- Place the basket in the drawer and insert it into the appliance preheated to 180ºC.
- Cook the straws for 4-6 minutes or until firm and golden – monitor the straws as they cook and rotate them halfway through cooking if necessary.
- If necessary, repeat the operation until you run out of straws.
- Remove from the Airfryer and leave to cool completely before filling: only fill when ready to serve to maintain crunchiness.
FINALIZATION AND ASSEMBLY:
- If you don’t intend to use the straws immediately, as soon as they are completely cold, place them in an airtight container so that the dough does not lose its crunchiness.
- When ready to serve, using a spoon or piping bag, fill each one shortcrust pastry straw with dulce de leche.
- If desired, dust with powdered sugar to finish.
- Serve as a dessert or as a party favor.
