“Malandrinho” cod rice: an easy Portuguese recipe, uses little fish and is delicious
Very wet rice “on the fly” with cod, the traditional Portuguese recipe, very practical, in just 1 pan

BACON AND COD Ingredients:
– 100 g of diced bacon
– 300 g of desalted cod chips (or chopped desalted cod)
Malandrinho Rice Ingredients:
– olive oil to taste, for the sautéing
– 1 1/2 cups of rice
– 5 cups boiling water + if necessary to prevent it from drying out
– 2 stalks of celery (4 cm each)
– 2 bay leaves
– 1 unit(s) of chopped onion(s)
– 4 clove(s) of minced garlic
– 2 Italian tomatoes, seedless, diced
– 2/3 units of red pepper, without the white part and seeds, diced
– 2/3 units of yellow pepper, without the white part and seeds, diced
– parsley to taste, chopped
– salt to taste
– pepper to taste THE
Ingredients TO COMPLETE:
– black olives to taste – Portuguese
– extra virgin olive oil to taste (drizzle)
PREPARATION:
- In advance: defrost the desalted cod or start desalting the cod, see how here.
- Separate the ingredients and utensils for the recipe.
- Place a saucepan of water on the heat to boil – add a slightly larger quantity than indicated for cooking, to be used if necessary.
- Trim the skin and excess fat from the bacon and cut it into cubes.
- Wash the celery and cut it to the size indicated in the ingredients.
- Wash and peel the onion and garlic and chop them.
- Wash the tomato, remove the seeds and cut it into cubes.
- Wash the peppers, remove the seeds and white parts and cut them into cubes.
- Wash and dry the parsley, chop it and set it aside on absorbent paper.
PREPARATION:
Malandrinho cod rice:
- Put a drizzle of olive oil in a thick-bottomed pan, add the bacon and heat it over a high heat, stirring occasionally to release the fat and brown it.
- Remove the bacon and set aside on a serving plate.
- If the bacon has released a lot of fat, discard some of it.
- Add the chopped onion and sauté until it starts to change colour.
- Add the garlic clove and sauté for another 1 minute.
- Add the peppers, mix and continue to fry for another minute.
- Add the cod cut into pieces and fry for another 2 minutes.
- Add the rice, mix well and brown again so that it mixes with the other ingredients.
- Add the tomato cubes and mix.
- Place the celery pieces and bay leaf(s) in the pan.
- Add boiling water (see quantities in the ingredients).
- Mix and season with salt and pepper.
- Lower the heat, leave the pan covered and cook for about 15-20 minutes.
- Continue to monitor the amount of water and the cooking of the rice (it must be al dente).
- If necessary, add a little more boiling water: the rice should be well wet, without drying out.
- When the rice is ready, remove the celery and bay leaf.
- Turn off the heat, add the chopped parsley and the bacon cubes and mix.
FINALIZATION AND ASSEMBLY:
- Serve immediately so that the rice does not dry out.
- Arrange the malandrinho cod rice on a serving plate or, if you prefer, distribute it among the plates.
- Arrange the black olives on top.
- Finish with a drizzle of extra virgin olive oil.
