Beef burrito
Ingredients
- 4 wheat tortillas
- 300 g of minced meat
- 1 onion peeled and chopped
- 1 carrot peeled and chopped
- 3 Parisian mushrooms chopped
- 100 g of grated mozzarella
- 1 bay leaf
- 2 tablespoons of olive oil
- 1 teaspoon chili sauce
- 1/3 cup tomato sauce
- Salt and ground black pepper to taste
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the onion and bay leaf and sauté for 3 minutes. Add the carrot and sauté for 2 minutes. Add the mushrooms and cook for 2 minutes. When the ingredients are golden, add the minced meat and mix to break up the pieces. Season with black pepper and salt. Cook until the meat loses its reddish color. Add the tomato sauce and pepper sauce and cook until the sauce has reduced. Turn off the heat and set aside. Place the tortillas in a pan and brown them on both sides.
Using a spoon, place the meat in the center of the tortilla, sprinkle with the grated cheese and fold the sides of the tortilla towards the center. Then, fold one end of the dough into the center and roll it completely. Serve then.
Guacamole

- Pulp of 2 avocados
- 1/4 cup lemon juice
- 1/2 cup peeled and chopped onion
- 1 cup seeded and chopped tomatoes
- 1/2 tablespoon olive oil
- Salt and ground black pepper to taste
- 1 bunch of chopped coriander
Preparation method
Place the avocado pulp in a container and, using a fork, mash it roughly. Next, water with lemon juice and add the onion, tomato and olive oil. Season with salt and black pepper. Add the coriander, mix and refrigerate. Serve then.
Pozole

- 500 g of pork cut into cubes
- 2 cups green corn tea
- 1 onion peeled and chopped
- 3 cloves of garlic, peeled and crushed
- 1 bay leaf
- 1 teaspoon cumin powder
- 1 teaspoon oregano
- Salt and ground black pepper to taste

Preparation method
Place the pork, corn, onion, garlic, bay leaf, cumin, oregano, salt and black pepper in a pan and cover with water. Bring to a boil over medium heat. Then lower the heat and cook for another 2 hours. Turn off the heat and remove the bay leaf. Serve with chopped cabbage, sliced ​​radish or chopped cilantro.

Mexican taco

- 2 tablespoons margarine
- 2 tablespoons cornstarch
- 2 teaspoons of salt
- Pork fat for basting
Filling
- 250 g of minced meat
- 1 tablespoon of oil
- 1 red pepper, seeded and chopped
- 1 onion peeled and chopped
- 3 cloves of garlic, peeled and chopped
- 1/2 cup tomato sauce
- 2 tablespoons of water
- 1 tomato seeded and cut into pieces
- Green cornchopped parsley, salt and chilli to taste

In a container, add the water and dissolve the corn flour. Add the rest of the ingredients and knead until you obtain a smooth and consistent dough. Then roll out the dough with a rolling pin and cut out discs. Place the discs on a baking tray greased with pork fat and bake in a preheated oven at 180°C for 20 minutes. Remove from the oven and set aside.
Filling
In a pan, add the oil and place over medium heat to heat. Add the minced meat, pepper, onion, garlic, salt and pepper and fry until the meat is dry. Add the tomato sauce and cherry tomatoes and mix. Add water and cook until dry. Turn off the heat and wait for it to cool. Arrange the filling on the pasta and then serve with parsley.
Simple Mexican chili pepper
Ingredients
- 1 tablespoon olive oil
- 1 onion peeled and chopped
- 4 cloves of garlic, peeled and crushed
- 1 teaspoon oregano
- 1 bay leaf
- 300 g of minced meat
- 2 cups tomato puree
- 1 teaspoon cumin
- 2 cups cooked and drained beans
- 1 tablespoon chopped parsley
- Pepper sauce to taste
- 1/2 cup grated mozzarella
Preparation method
In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown them. Add the oregano, bay leaf and minced meat and fry until the meat loses its reddish colour. Add the puree tomatocumin and cook until it thickens. Add the beans and chopped parsley and boil for 10 minutes. Finally add the pepper sauce and mix. Place the chilli in a deep container, sprinkle with grated cheese and serve.
Eloté
Ingredients
- 2 ears of green corn
- 2 tablespoons butter
- 1/2 cup mayonnaise
- 100 g of cheese grated feta
- 2 tablespoons chili powder
- Juice of 1/2 lemon
Preparation method
Preheat the fryer to 160°C and place the corn cobs in the basket. Cook for 8 minutes and spread butter on the ears. Cook for another 5 minutes and remove from the fryer. Brush the ears with mayonnaise and sprinkle them with feta and chilli. Finish by sprinkling with lemon juice and serve immediately.
