Peppers stuffed with mashed potatoes

Ingredients:
Puree:
- 1 cup (tea) water
- 1 cup coconut milk (tea)
- 1 tablespoon margarine
- Salt to taste
- 1 cup ready-made mashed potatoes
Peppers:
- 2 medium green peppers
- 2 medium yellow peppers
- Salt to taste
- 1 onion chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 can of grated tuna in water
- 1 sachet of shrimp flavored seasoning
- 1 tablespoon chopped fresh parsley
- 2 cups potato straw
- Grated Parmesan for sprinkling
Preparation method:
- For the mashed potatoes, combine the water, coconut milk, margarine and salt in a pan. Bring to the boil.
- Turn off the heat, add the potato flakes, mix until smooth and set aside.
- For peppers, cut off the top and remove the seeds.
- Place a pan full of water on the heat and bring it to the boil.
- When it boils, season with salt, add the peppers and cook for 5 minutes.
- Drain them and quickly dip them in ice water. Drain again and set aside.
- In another pan, brown the onion and garlic in olive oil, add the tuna, the shrimp seasoning sachet and brown.
- Next, add the puree. Mix and remove from the heat.
- Add the parsley, the straw potatoes and stuff the peppers.
- Sprinkle with grated cheese and heat until golden brown. Serve then.
