Ana Maria Braga received visits on her farm last weekend and prepared a “watched” bean panel, a recipe created by a secret aunt: she included chayote and carrots on her plate.

The recipe is made with carioca beans, which is immersed in water for 12 hours and transports salted meats such as bacon, sausage and ribs. “For so much sausage in these beans we understand why it is stored,” a follower joked.

Ingredients

1 kilo of carioca beans (immerse in water for 12 hours)

100 grams of diced bacon

1 sausage of smoked peppers in slices

150 grams of fresh sausage in the slices

200 grams of smoked ribs in slats

1 onion in cubes

4 Squeezed garlic cloves

1 spice tablet for beans

1 tablespoon of tomato extract

1 pinch of sugar

2 Bay leaves

Chopped red salt and pepper to taste

1 cubic chayote

1 carrot in slices or cubes

500 milliliters of boiling water, if necessary

Methods of preparation

1 – Drain and cook the beans with clean water in the pressure cooker for 15 minutes after starting to creak.

2- In the meantime, fry the meats in their fat until they golden.

3 – Add onion and garlic and brown until it dries and grabbed on the bottom.

4 – Add the beans with the broth and mix well, scraping the bottom to solicit the clutch.

5 – Add the other ingredients except the water and cook over medium heat, without lid, for about 1 hour or until the broth thickens, stirring occasionally and adding the boiling water gradually, if necessary, to keep the broth.
