An irresistible spinach pie with potato mixture and lots of cheese, perfect for a light and nutritious vegetarian meal

Ingredients for the potato cake dough:
– 1 kg of potatoes
– 1 unit of beaten egg
– 3 tablespoons of grated parmesan
– 4 tablespoons of breadcrumbs THE
– salt to taste
Ingredients for the spinach filling:
– 2 large bunches of spinach (leaves only)
– 2 cloves of garlic, chopped
– olive oil to taste
– salt to taste
– pepper to taste
Ingredients TO ASSEMBLE:
– 100 g of mozzarella, grated on the coarse side
– 100 g of Gruyere cheese, grated from the large part (or provolone)
– Parmesan to taste, grated for sprinkling
Ingredients FOR GREATING:
– olive oil to taste
PREPARATION:
- This savory cake can be assembled in a mold with a removable base or, if you prefer, use a refractory baking dish and serve without removing the mould. Grease your chosen utensil with olive oil.
- Separate the ingredients and other utensils for the recipe.
- Start by cooking the potatoes (see preparation).
- Wash the spinach well, separate the leaves. Next, brown the spinach (see preparation).
PREPARATION:
Potatoes – Cooking:
- Wash and peel the potatoes and cut them into large cubes.
- Place the cubes in a pan, cover them with cold water and add a little salt.
- Place over high heat and when it boils, lower the heat to medium.
- Cook for 15-20 minutes or until very soft.
- Next, sauté the spinach.
Spinach – Sauté:
- Peel and mince the garlic clove.
- In a pan, sauté the minced garlic in olive oil until it starts to change color.
- Add the spinach leaves and when they soften, season with salt and pepper.
- Turn off the heat and set aside.
Mashed potatoes:
- When the potato is very soft, drain it.
- Squeeze the boiled potatoes while they are still hot with a potato masher or a sieve placed in a bowl.
- Let it cool and in the meantime grate the cheese to assemble the cake.
Potato Pasta:
- Open the egg/s in a bowl, beat until blended and measure out the quantity needed for the mixture.
- Add the beaten egg(s) to the mashed potatoes.
- Add the grated parmesan and breadcrumbs and mix until you obtain a smooth mixture.
- Season with salt.
Spinach pie in potato paste – Assembling:
- Preheat the oven to 200ºC.
- Place 2/3 of the potato mixture in the greased baking tray or refractory pan(es) and level it on the bottom and sides until the dough is 0.5 cm thick. The height of the dough at the sides must be sufficient to contain all the filling.
- Spread the sautéed spinach on top and then distribute the grated cheese.
- Cover with the rest of the dough and press the edges well with moistened or greased fingers with a drizzle of oil so that the filling does not come out.
- Sprinkle with grated parmesan.
Spinach pie in potato paste – Baking:
- Place the mold or refractory(s) in the oven preheated to 200ºC.
- Bake for 20-30 minutes or until the top is golden.
FINALIZATION AND ASSEMBLY:
- If you use the foldable form, transfer spinach pie with potato mixture on a serving plate or cut it into slices and arrange on plates.
- In the case of refractories, bring them directly to the table.
- Serve the cake immediately.
