Rice cake stuffed with cheese

Ingredients:
- 2 cups cold cooked rice
- 1 tablespoon crushed garlic
- 3 tablespoons chopped parsley
- 1/2 cup chopped green olives
- 1/2 cup grated parmesan
- 1 egg yolk
- 1/2 cup (tea) wheat flour
- 2 cups cubed mozzarella
- 2 egg whites
- Breadcrumbs for breading
- Frying oil
Preparation method:
- In a bowl, mix the rice, garlic, parsley, olives and parmesan.
- Add the lightly beaten eggs and the egg yolk and mix until a smooth mixture is obtained.
- Add the flour, little by little.
- Blend quickly in the food processor and then mix well with your hands.
- Form the dough into balls and place a cube of mozzarella inside each one.
- Dip them in the lightly beaten egg whites and breadcrumbs and fry them in hot oil.
- Drain on absorbent paper.
- If desired, serve immediately with pepper sauce.
