EQUIPMENT

air fryer + conventional

METERS

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

CASSAVA INGREDIENTS IN THE AIRFRYER

– 400 g cassava/cassava/cassava, peeled

– unsalted butter to taste – as needed

– salt to taste

PREPARATION:

  1. Start by cooking the cassava (see preparation).
  2. While the cassava cooks, separate the other ingredients and utensils for the recipe.
  3. # top tip: Sprinkling or brushing the cassava with a light layer of fat creates a crispier crust, while also adding another layer of flavor to the preparation. However, this technique is not mandatory and, if you prefer, cassava can be roasted without fat.
  4. If you prefer to use shortening and opt for butter, place it in a non-metallic bowl and heat it in the microwave for 20-30 seconds to melt.

PREPARATION:

Cassava/Macaxeira/Aipim – Cooking:

  1. Wash the peeled cassava well and cut it into small pieces.
  2. Place in a pan and cover with water – 3 fingers above the height of the cassava.
  3. Add the salt, cover the pan and place it on a high heat.
  4. When it starts to boil, lower the heat to medium and cook for about 20 minutes, this time may vary depending on the quality of the cassava.
  5. Once it is very soft, drain it.
  6. Place it over a colander and let it dry.

Cassava/Macaxeira/Cassay in the Airfryer:

  1. Preheat the Airfryer to 180°C for approximately 5 minutes.
  2. Cut the cassava in half lengthwise and remove the central thread.
  3. Then, divide it into smaller pieces – sticks or billets – the size depends on your preference, but keep them all proportional, so they cook evenly.
  4. Arrange the cassava/cassava/cassava in the basket with the skin facing up, without overlapping them.
  5. #tip – Brush (optional) the sweet potatoes lightly with melted butter or olive oil for a fried color.
  6. Insert the basket into the drawer. If you are preparing a larger quantity, divide it into several stages.
  7. Close the drawer and bake for about 15 minutes, or until they are crispy and golden on the outside and soft on the inside; this time may vary based on the cut, size and power of your equipment.
  8. Shake/turn the cassava 2 or 3 times during the process – divide it equally – every 5 minutes – so that the cassava browns evenly.
  9. Once golden brown, remove the basket from the Airfryer.

FINALIZATION AND ASSEMBLY:

  1. Reorder cassava in the Airfryer on a serving plate or, if you prefer, distribute it on plates next to your main course.
