Pumpkin sauce with ricotta
Time: 20 minutes
Performance: 6 servings

Ingredients:
- 2 tablespoons butter
- 1 onion chopped
- 2 cloves garlic, minced
- 2 1/2 cups diced squash
- 1 1/2 cups (tea) water
- 1/2 cup cream cheese (tea).
- Salt and black pepper to taste
- Grated Parmesan and chopped parsley for sprinkling
Preparation method:
- In a pan, over medium heat, melt the butter, sauté the onion and garlic for 3 minutes.
- Add the pumpkin, water, vegetable broth and cook for about 10 minutes or until it has softened.
- Blend in the blender with the ricotta, salt and pepper.
- Sprinkle with parmesan, parsley and serve with your favorite pasta.
