Pumpkin sauce with ricotta




Time: 20 minutes

Ingredients:

  • 2 tablespoons butter
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 1/2 cups diced squash
  • 1 1/2 cups (tea) water
  • 1/2 cup cream cheese (tea).
  • Salt and black pepper to taste
  • Grated Parmesan and chopped parsley for sprinkling

Preparation method:

  1. In a pan, over medium heat, melt the butter, sauté the onion and garlic for 3 minutes.
  2. Add the pumpkin, water, vegetable broth and cook for about 10 minutes or until it has softened.
  3. Blend in the blender with the ricotta, salt and pepper.
  4. Sprinkle with parmesan, parsley and serve with your favorite pasta.
