Stollen, a heavy, crumbly, aromatic yeast-based cake, was invented in Germany and is prepared and eaten around the world. Ready-made stollen is expensive, so we suggest mastering the recipe to prepare it yourself. Pastries wrapped in parchment and artistically tied with twine make a great gift for your loved ones, so bake in abundance.
Ingredients:
- flour – 700 g;
- butter –250 g;
- chicken eggs – 2 pieces;
- sugar – 80 g;
- milk – 200 ml;
- fresh yeast – 50 g;
- almonds – 250 gr;
- raisins and candied fruits – 500 g;
- rum – 100 ml;
- lemon – 1 piece;
- powdered sugar, cinnamon, salt.
How to cook:
- Wash the raisins, cut the candied fruit, chop the nuts and leave everything to soak in a container overnight, pour in the rum.
- Dissolve yeast in warm milk, add 1 tbsp. L. sugar and 1/3 sifted flour. Leave the dough in a warm, draft-free place. When it rises, knead the dough – add the rest of the flour, sugar and a pinch of salt. Add the eggs and softened butter.
- Cover the finished dough with a towel and let it rise, then knead it. Add the contents of the rum container, the lemon zest and juice, and cinnamon to taste. Knead the dough well and let it rise for 3 hours, kneading it several times during this time.
- Divide the dough into two equal parts. Roll them lightly into thick cakes by making a depression in the middle of each with a rolling pin, then fold the stollen in half. Place both on baking paper on a baking tray, leave to rise for half an hour, during this time heat the oven to 200°C.
- Bake for 15 minutes at this temperature, then reduce to 170°C and bake for another 45 minutes. Grease the finished stollen very abundantly with butter and sprinkle with powdered sugar, it should cover them with a thick layer.
Wrap the cupcakes in parchment paper and leave them in the fridge for at least a week – the stollen needs time to ripen.
