Ingredients:

  • 4 eggs (whites and yolks separated)
  • 1 1/2 cups (tea) sugar
  • 2 tablespoons butter
  • 3 tablespoons of wheat flour
  • 1 cup seedless white raisins
  • 1/2 cup chopped apricots
  • 1/2 cup chopped black plums
  • 1 cup chopped walnuts
  • 1 tablespoon of chemical yeast
  • Margarine and wheat flour for greasing
  • Candied fruit to taste for decoration

Coverage

  • 2 cups powdered sugar

Preparation method:

  1. Using a mixer, beat the egg whites and set aside.
  2. Still using the planetary mixer, in another bowl, beat the egg yolks with the sugar and butter until a soft cream forms.
  3. Add the flour and mix until smooth.
  4. Add the raisins, apricots, plums and walnuts and mix with a spoon.
  5. Add the egg whites and yeast and mix gently with a spoon.
  6. Pour the mixture into a greased and floured 30cm diameter pan and bake in a preheated medium oven for 30 minutes or until an inserted toothpick comes out clean.
  7. Wait for it to cool and unmold it.
  8. For the topping, mix the icing sugar and orange juice until a syrup forms.
  9. Drizzle the cake with this syrup, decorate with candied fruit and serve immediately.
