Roasted Eggplant Ingredients:

– 1 large aubergine(s), cut into slices of approximately 1 cm

– 1 medium clove of garlic

– olive oil to taste, for brushing

– salt to taste

Ingredients FOR GREATING:

– olive oil to taste

Walnut sauce ingredients:

– 1/4 cup(s) cracked walnuts

– 2 tablespoons of olive oil

– 1/4 cup(s) basil (leaves), roughly chopped

– 1 tablespoon chopped parsley

– salt to taste

– pepper to taste THE

Ingredients TO COMPLETE:

– 2 pitted black olives, coarsely chopped (optional)

PREPARATION:

  1. The quantities indicated in the recipe refer to the aubergines to be served as an appetizer. For the main course, double these quantities.
  2. Start by preparing the aubergines. Depending on the quantity and your preferences, carry out this step in the oven or in the fryer (see preparation).
  3. Set aside the other ingredients and utensils for the recipe.
  4. Wash the basil and parsley, dry them and chop them coarsely.
  5. Chop the walnuts and measure the quantity needed for the recipe.
  6. Remove the stone from the olives (optional) and chop them coarsely.

PREPARATION:

Eggplant – Roast (do this step before continuing the preparation):

  1. Preheat the oven to 200ºC or the fryer to 180ºC.
  2. Wash and dry the aubergine(s) and cut them into slices about 1 cm thick. Important: aubergines must be cut immediately before cooking to avoid oxidation.
  3. Wash the garlic clove, leave it whole, without peeling it.
  4. Put the olive oil in a bowl, add the salt and brush the slices on both sides to season them.
    • Oven: Grease the baking tray(s) with a drizzle of olive oil. Arrange the aubergine slices and the garlic clove on greased baking trays, bake in a preheated oven at 200°C and cook for about 30 minutes, turning halfway through cooking or until they are cooked and golden.
    • Airfryer: place the aubergine slices and the garlic clove in the Airfryer basket – if the basket is non-stick, it is not necessary to grease it – insert the basket into the drawer, insert it into the appliance preheated to 180ºC and cook for approximately 15-20 minutes, turning halfway through cooking, or until soft when pierced with a fork and golden.
  5. While the aubergines are cooking, continue the preparation (point 3).

Rustic Walnut Sauce:

  1. Once the aubergine slices are cooked, remove them from the oven or fryer. Set aside and prepare the sauce later.
  2. Peel the garlic clove that has been roasted together with the aubergines and place it in the food processor, add the other ingredients (walnuts, basil, parsley, olive oil) and blend until the nuts are broken, without turning a folder.
  3. Season with salt and pepper and mix without beating.
  4. Book.

FINALIZATION AND ASSEMBLY:

  1. Arrange the roasted aubergine slices on a serving platter or, if you prefer, arrange them directly on the plates.
  2. Spread the walnut sauce over the aubergines.
  3. Finish with chopped olives (optional).
  4. Serve to Roasted aubergines with walnut sauce warm or at room temperature
