Ingredients:

  • 150 g diced bacon
  • 4 tablespoons of olive oil
  • 2 crushed garlic cloves
  • 1 onion chopped
  • 2 diced seedless tomatoes
  • 1 can drained green corn
  • 1 can of drained peas
  • 3 cups cooked white rice
  • 1 cup semi-hard cheese (diced)
  • 5 tablespoons chopped green chili pepper
  • Salt and black pepper to taste
  • 1/2 cup grated mozzarella
  • 1/2 cup grated parmesan

Preparation method:

  1. Fry the bacon in its own fat, stirring until golden brown. Drain on absorbent paper.
  2. Pour off any excess fat and heat the oil in the same pan.
  3. Fry the peppers and when they start to brown add the garlic, the onion and fry for 3 minutes.
  4. Mix the tomato, corn and peas and brown them for 2 minutes. Learn.
  5. Add the rice, cheese, green chile, half the bacon and season with salt and pepper. Pour into a refractory dish.
  6. Sprinkle with mozzarella and parmesan and bake in a high, preheated oven for 15 minutes or until golden brown.
  7. Sprinkle with bacon and serve.
