Light, delicious and easy to prepare, the quiche also contains 8 generous portions. In total, the preparation method takes only 50 minutes.

Ingredients:
- 4 cups (tea) of wheat flour
- 2 eggs
- 4 tablespoons butter
- 1/2 cup milk (approximately)
- Margarine and wheat flour to grease and flour the pan
Filling
- 3 cups desalted, cooked and chopped cod
- 2 cups hearts of palm, drained and chopped
- 1 chopped tomato
- 3 beaten eggs
- 1 cup grated mozzarella
- Salt and black pepper to taste
Preparation method:
- For the filling, in a bowl, mix the onion, cod, heart of palm, tomato, beaten eggs, mozzarella, season with salt, pepper and set aside.
- Place the flour, eggs, butter and milk in a bowl and mix until a smooth mixture is formed. If necessary, add more milk.
- Line the bottom and sides of a greased and floured 24cm removable springform pan, spread the filling and bake in a medium preheated oven (180ºC) for 30 minutes or until cooked through and lightly golden.
- Remove from the oven, turn out onto a plate and serve.
