Even if you are not one of those coffee lovers which has several methods to extract a cup, the act of focusing on a special coffee is already a great start. The most recent sector survey, conducted in 2017 by Euromonitor for the Brazilian Association of Specialty Coffees (BSCA), highlighted that specialty coffees represent 2.8% of the total beverage market. And the survey also made a market projection in 2021, with a growth of 5.1%.

Driven by the growing interest of Brazilians in specialty coffees, several coffee shops and e-commerce have invested in a diverse selection of beans produced in the country’s major coffee regions. You can find from that daily coffee with notes of caramel and balanced acidity, to the most diverse ones, with mango flavor and citric acidity.

Record of caffeine

Although it has that label name, roasting has its biggest hits in specialty coffees. The micro roaster offers a selection of coffee beans, purchased from small producers and roasted right there. The proposals range from coffee for everyday use, such as Azul coffee, based on red catimor produced by Fazenda São Domingos, to Divino (MG), with remarkable sweetness and low acidity (R $ 14.90, 250g), to more suggestions exotic, such as Púrpura coffee, based on red catuaí produced by Sítio Alto da Serra, in Natércia (MG), with notes of grape, cherry and mango (R $ 60, 250g). Bixo coffee

A year has passed since the couple Carolina Pereira and Matheus Cappellato launched an e-commerce dedicated to specialty coffees, extracted in Alta Mogiana, Cerrado Mineiro and Mantiqueira de Minas, and roasted by them. The flagship is the Vira-lata caramelo coffee, based on red obatã produced by the Fazenda Bela Época, in Franca (SP), with notes of caramel and slight acidity (R $ 22, 250g), but it is possible to find suggestions such as the Raspberry Sour, based on yellow catuaí produced by Fazenda Capadócia, in São Gonçalo do Sapucaí (MG), with notes of red fruits and citric acidity.

Recently, the two-unit coffee shop in the capital of São Paulo – Jardins and the JK Iguatemi shopping center – launched an e-commerce (cafehabitual.com/shop) where it offers four types of specialty coffees, produced at Fazenda Caxambu, a Três Pontas (MG). While Bourbon Moka coffee has floral and caramel notes, Arara coffee has notes of molasses, yellow fruits, as well as surprising acidity. Honey coffee has notes of burnt sugar, honey, molasses and green corn, while Passa Natural coffee has floral notes, molasses, yellow fruits and citric acidity (R $ 41.90 each, 250 g).

For now, the coffee shop located in Vila Mariana only works with deliveries and collections. In the coffee line, the highlight is the Campo Místico red catuaí coffee, produced in Bueno Brandão (MG), with notes of red fruits and good acidity (R $ 39, 250g), the Aha Quebra-Nozes coffee, based on catuaí red produced by Sítio Santa Rita, in the region of Caparaó (MG), with notes of chocolate and nuts, present acidity and good body (R $ 29, 250g), in addition to Tequila Café Tropicália, with floral notes, lemon and yellow fruit and notable citric acidity (R $ 45, 250g). The delivery cafeteria, under the command of Marcos Martins, offers two types of coffee: Espresso, which has notes of chocolate, caramel and moderate acidity, in addition to Methods, with notes of yellow fruits and more acidity. The varieties change according to the harvest, but the beans of the moment are Mundo Novo, produced in Piatã (BA) and which combines notes of chocolate and moderate acidity, in addition to the red catuaí, produced in Matas de Minas (MG), with notes of yellow fruits and marked acidity (R $ 26 each, 250g). Couple Cauã Sperling and Claudia Suzuki run the café, which offers a selection of Sperling’s baked and roasted cereals. On sale both on the app itself and in stores – the Berrini branch is in soft open – specialty coffees are purchased by producers in the Mantiqueira de Minas region and roasted in the café itself, by Tiago de Mello. In the line of special coffees, the Família Tequila stands out, based on yellow catuaí fermented by Samuel Mangia in Baependi (MG), with notes of papaya with cassis, orange and black tea (R $ 60, 250g) and the Família Meirelles lot 11 / 20, based on fermented aranãs by Sérgio Meirelles in São Gonçalo do Sapucaí (MG), with notes of black fruits, dark chocolate and lemon balm (R $ 40, 250 g).

Among the proposals, available in stores and on the romeoromeocafe.com.br website, the highlight is the yellow bourbon coffee, produced at Sítio Boa Vista do Engano, in Caconde (SP), with notes of red fruits and chocolate, as well as moderate acidity (R $ 28, 250 g). From the same production comes also the Blend RomeoRomeo, the same used in the cafeteria, which has fruity notes and low acidity (R $ 25, 250g).
