Roasted Pumpkin with Honey and Spices Ingredients:

– 250 g of cabotiĆ” pumpkin, cut into half moons (with the peel)

– 1 tablespoon(s) honey (or sugar cane honey (molasses or sugar cane molasses))

– 1/4 teaspoon of sweet paprika ab

– 1/4 teaspoon(s) of ground cinnamon THE

– 1/4 teaspoon cumin (optional) THE

– 1 tablespoon(s) of olive oil

– thyme to taste (twigs) – to perfume (optional)

– salt to taste

Ingredients TO COMPLETE:

– 2 Brazil nuts coarsely chopped

– 1/2 tablespoon(s) honey (or sugar cane honey (molasses or sugar cane molasses))

PREPARATION:

  1. The types and quantities of spices listed in the ingredients can be changed to suit your preferences.
  2. If using honey, use orange honey for a milder flavor or wild honey for a bold flavor. For a vegan/vegetarian recipe, use sugar cane honey.
  3. Separate the utensils and ingredients for the recipe.
  4. Wash the pumpkin under running water, without peeling it. Cut the piece you will use in the recipe.
  5. Using a spoon, remove the seeds and fibers from the inside and cut it into medium half-moons, about 2cm thick – depending on the size of the airfryer basket, if necessary, also cut the slices in half in a criss-cross pattern.
  6. Mix the honey, spices, olive oil, salt and pepper in a bowl and set aside.
  7. Wash and dry the thyme sprigs (optional).
  8. Finally, coarsely chop the Brazil nuts.
  9. Preheat the Airfryer to 180°C for 5 minutes.

PREPARATION:

Airfryer Pumpkin with Honey and Spices:

  1. Toss the squash slices with the dressing in the bowl, using your hands or a pastry brush, until well coated.
  2. Arrange the pumpkin crescents in the Airfryer basket, one next to the other, without stacking them, leaving space between them to allow air circulation – depending on the quantity and size of the equipment basket, cook in stages.
  3. Place the basket in the drawer and insert it into the appliance preheated to 180ĀŗC.
  4. Cook for 10-12 minutes, checking the cooking according to the moisture of the pumpkin and the power of the equipment.
  5. Turn the pumpkin slices halfway through cooking to ensure even cooking.
  6. In the last 5 minutes, brush the thyme sprigs (optional) with olive oil, open the drawer and place them on top of the squash to add an extra layer of flavor.
  7. When the pumpkin is cooked, slightly golden and with caramelized edges, insert a toothpick or fork into the pulp to check the softness of the vegetable.
  8. Remove the basket from the drawer and remove the thyme sprigs.
  9. Transfer to a serving platter to serve.

FINALIZATION AND ASSEMBLY:

  1. Sprinkle the chopped chestnuts over the top and finish with a drizzle of honey or honey.
  2. Serve to roasted squash in the air fryer with honey and spices hot or at room temperature, to enhance the flavours.
