Mini strawberry pavlova with chocolate

Ingredients:

  • 8 egg whites
  • 2 1/2 cups (tea) sugar
  • Zest of the peel of 1 lemon
  • 1 teaspoon cream of tartar
  • Margarine for greasing
  • 1 pack of chopped strawberries (300 g)

Ganache:

  • 300g chopped semi-sweet chocolate
  • 1 pack of cream (200 g)

Preparation method:

  1. Beat the egg whites with a mixer at high speed until stiff.
  2. Add the sugar, little at a time, without stopping whisking.
  3. Then add the lemon zest and cream of tartar and continue beating until the mixture is firm.
  4. Turn off the heat and transfer the cream into a piping bag with a pearl nozzle.
  5. Make discs of 10 cm in diameter with the highest edges, one next to the other, on a baking tray lined with greased baking paper and place them in a low, preheated oven for 30 minutes or until cooked and lightly golden.
  6. Remove from the oven, let cool, remove from the mold and set aside.
  7. For the ganache, melt the chocolate in a bain-marie and add it to the cream.
  8. Spread the ganache over the meringue discs and place the strawberries on top. Serve then.
