Mini strawberry pavlova with chocolate
Time: 1 hour
Performance: 10 servings

Ingredients:
- 8 egg whites
- 2 1/2 cups (tea) sugar
- Zest of the peel of 1 lemon
- 1 teaspoon cream of tartar
- Margarine for greasing
- 1 pack of chopped strawberries (300 g)
Ganache:
- 300g chopped semi-sweet chocolate
- 1 pack of cream (200 g)
Preparation method:
- Beat the egg whites with a mixer at high speed until stiff.
- Add the sugar, little at a time, without stopping whisking.
- Then add the lemon zest and cream of tartar and continue beating until the mixture is firm.
- Turn off the heat and transfer the cream into a piping bag with a pearl nozzle.
- Make discs of 10 cm in diameter with the highest edges, one next to the other, on a baking tray lined with greased baking paper and place them in a low, preheated oven for 30 minutes or until cooked and lightly golden.
- Remove from the oven, let cool, remove from the mold and set aside.
- For the ganache, melt the chocolate in a bain-marie and add it to the cream.
- Spread the ganache over the meringue discs and place the strawberries on top. Serve then.
