Passion Fruit Salmon: easy to prepare, hard to forget


Salmon recipe with passion fruit sauce: quick and easy, with an irresistible flavor that will make your meal impossible to forget




Juicy salmon, baked or grilled, covered in an irresistible sweet and sour passion fruit sauce, ideal for special moments

Salmon ingredients:

– 900 g of fresh salmon (fillet)

– 3 tablespoons of olive oil for basting (if grilling) adjust the quantity

– salt to taste

– pepper to taste B

Passion fruit sauce ingredients:

– 3 units of passion fruit (juice and seeds)

– concentrated passion fruit juice (already ready) to taste

– 7 and 1/2 tablespoons of honey (or brown sugar)

– 1 1/2 tablespoons cold unsalted butter

– salt to taste

Ingredients TO COMPLETE:

– dill to taste (or other dill of your choice)

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. Salmon fillets can be prepared with or without skin, depending on your preference. For roasting it is advisable to remove the skin.
  3. If you roast the fillets in the oven, prepare the sauce while they roast. If you choose to cook on the grill, prepare the sauce in advance and reheat it before serving.
  4. Portion the salmon fillets and season them with salt and pepper. For a more intense flavor, let it rest for 15 minutes after curing.
  5. Wash the passion fruit, cut it in half and extract the pulp. Pass through a sieve to separate the seeds from the juice and set aside.
  6. Measure the extracted juice and top up with concentrated juice until you get 1 cup (every 2 servings).
  7. Wash the dill or other fresh herb, chop it (optional) and set aside on paper towels.

PREPARATION:

Passion fruit sauce – see point 3 of the pre-preparation:

  1. In a pan, over medium heat, heat the passion fruit juice with the honey or brown sugar, stirring with a whisk until they are completely incorporated.
  2. Add the seeds and cook until the sauce is reduced to 1/3 of its volume, about 8-10 minutes.
  3. Taste and if you want a sweeter sauce add more honey or brown sugar, stirring to combine.
  4. Turn off the heat and add the cold butter, whisking to emulsify.
  5. The sauce should have a slightly thick consistency, enough to cover the salmon.
  6. Adjust the salt and set aside.

Preparation of salmon with passion fruit sauce (ROASTED or GRILLED):

Roasted salmon:

  1. Preheat the oven to 200°C.
  2. Line a baking tray with aluminum foil and grease it with half the olive oil.
  3. Arrange the fillets on the baking sheet, drizzle with the remaining olive oil, and, if desired, add 1 tablespoon passion fruit juice (for every 2 servings).
  4. Cover with aluminum foil and cook for 15 minutes (for medium-rare fish).
  5. Remove the foil and cook for a further 5 minutes until golden brown.
  6. If necessary, adjust the oven time based on the power of your equipment or your personal preferences for cooking fish, whether rare or well done.

Grilled salmon:

  1. Heat a non-stick pan greased with a drizzle of olive oil over medium-high heat.
  2. Once hot, place the salmon fillets skin side down (optional).
  3. Grill for about 4-5 minutes on each side or until the salmon is cooked to your desired doneness.

FINALIZATION AND ASSEMBLY:

  1. Arrange the fillets salmon in passion fruit sauce on a serving plate or, if you prefer, distribute it among the plates.
  2. Drizzle with the passion fruit sauce, allowing some to drip down the sides.
  3. Finish with dill or another fresh herb of your choice.
  4. Suggestion: accompany with white rice with sliced ​​almonds.
