Healthy, dairy-free, sugar-free mother-in-law’s eye (don’t add it at the end): a healthy portion of this treat
The traditional sweet made from very ripe bananas, practical, easy and healthy.

Ingredients MOTHER-IN-LAW’S EYE BANANA
– 4 pieces of silver bananas, very ripe
– 70 ml of coconut milk
– 8 tablespoons of grated dry coconut
– 2 tablespoons coconut oil + a little for greasing, if necessary
Ingredients TO COMPLETE:
– sugar to taste (optional)
– pitted prunes to taste – 1/2 per unit
PREPARATION:
- The recipe for 4 people yields approximately 18 units of approximately 25 g each – use medium-sized paper cups.
- Separate the recipe ingredients and utensils.
- Use very ripe bananas to make your treat even sweeter and tastier.
- Peel the bananas and mash them with a fork until you obtain a very smooth puree or use the food processor (see preparation).
PREPARATION:
Banana mother-in-law’s eye – Pasta:
- In a bowl, mix all the recipe ingredients: mashed or processed banana, shredded coconut, coconut milk, and coconut oil. Mix everything very well. If you prefer, perform this step using your processor.
- Place the banana kiss dough in a pan.
- Place over low heat and mix with a spatula, scraping the bottom and sides of the pan well to prevent it from sticking and burning.
- When the mixture has thickened and reached the curling point (to know if it is at the right point, check if the mixture is detaching from the bottom of the pan) and turn off the heat.
- Transfer the beijinho dough to a lightly greased serving plate or deep plate, cover with cling film and let cool to room temperature.
- Then refrigerate for 2 hours or until solid.
Mother-in-Law’s Eye Banana – Roll Up:
- Open the paper molds and place them on a serving plate or other dish of your choice.
- Place the final granulated sugar (optional) on a plate or deep bowl.
- Split the plums in half lengthwise.
- Grease your hands with a light layer of coconut oil or moisten them with a little water, if necessary (the dough should be soft and not sticky).
- Take a portion of the dough, using 1 teaspoon as a measurement, and roll it into a ball.
- Arrange the plum outside the cake, in one of the halves.
- Dip the sweets in crystalline sugar (optional) and arrange them in the molds.
- Repeat the operation with the rest of the dough.
FINALIZATION AND ASSEMBLY:
- Preserve banana mother-in-law’s eyes in the refrigerator.
- Remove some before serving.
