Ingredients:

  • 1.5 kg of beef ribs cut into pieces
  • Salt, black pepper and chopped green chilli to taste
  • 2 chopped onions
  • 4 crushed garlic cloves
  • 1 bay leaf
  • 1 tablespoon of tomato paste
  • 2 cubes of meat broth
  • 2.5 liters of boiling water
  • 800 g cassava pieces

Preparation method:

  1. Heat a pressure cooker with olive oil over high heat and fry the ribs with salt and pepper until golden brown.
  2. Add the onion, garlic, bay leaf, extract, tomato, broth and sauté for 5 minutes.
  3. Cover with water, cover and cook for 40 minutes, over low heat, from when the pressure starts.
  4. Turn off, let the pressure release naturally and open the pan.
  5. Add the cassava, cover with more water if necessary, cover and cook for 20 minutes, over low heat, from when the pressure starts.
  6. Turn off, let the pressure release naturally and open the pan.
  7. Season with salt, pepper and green chilies and serve immediately.
