Tapioca pancake stuffed with chicken

Ingredients:

  • 4 eggs
  • 16 tablespoons tapioca (hydrated gum)
  • 4 tablespoons of water
  • Salt to taste

Filling

  • 2 cups ricotta puree
  • 150g cream cheese
  • 2 seedless tomatoes chopped
  • 1 tablespoon grated onion
  • 1 1/2 cups cooked, shredded chicken
  • Salt, black pepper and chopped parsley to taste

Sauce

  • 3 tablespoons butter
  • 1 grated onion
  • 2 tablespoons of wheat flour
  • 2 cups milk (tea)
  • 150g cream cheese
  • 1 tablespoon mustard
  • Salt and nutmeg to taste

Preparation method:

  1. For the dough, blend the eggs, tapioca, water and salt in a blender until smooth.
  2. Heat a non-stick pan over medium heat, add the equivalent of 1 small ladle of mixture and mix to cover the entire bottom.
  3. Let it brown slightly. Turn the dough and brown the other side.
  4. Proceed in the same way with all the dough. Let it cool.
  5. For the filling, in a bowl, mix all the ingredients.
  6. Divide between the masses and fold in half to form a half moon.
  7. For the sauce, melt the butter in a pan over medium heat and sauté the onion for 2 minutes.
  8. Sprinkle flour and fry for 1 minute.
  9. Add the milk, little at a time, and mix until it thickens.
  10. Add the cream cheese and mustard and season with salt and nutmeg.
  11. Arrange the pancakes on a plate, drizzle them with the cold sauce and serve immediately.
