Bao, as it is called in Chinese, or bun, as it is called in English, is a delicate bread, with a long leavened and steamed dough.

Steamed Chinese bread – called bao in China and bun in English – is proof that appearances can be deceiving. It was the Korean-born American chef David Chang who made this evident to the Western world. He was the one who created a signature version of the fluffy white sandwich filled with pork belly, a little cucumber, chives and spicy sweet and sour sauce. An instant success since he opened his Momofuku restaurant in New York in 2004. There, bao began his international career (as did Kimchi, the Korean reservation, but that’s another story).

The combination seems unlikely: tempura and bao. But it works very well. The vegetables are thinly sliced, breaded in a very delicate tempura and fried until crisp and dry.
