A light and healthy version of the classic Caesar salad, with grilled chicken breast and a creamy egg sauce without mayonnaise, made of yogurt. Perfect for a balanced and nourishing meal!

Chicken fillets:

Pre-repair:

  4. Adjust the consistency by adding more extra virgin olive oil if you want a more fluid sauce.
  5. Book the refrigerated sauce up to the assembly.

Lettuce leaves:

  1. Wash the lettuce leaves well and remove the residues from hygiene with sodium hypochlorite.
  2. Drain, dry well or centrifuges.

Grilled chicken:

  1. Heat a pan with olive oil over medium-high heat.
  2. Grill the chicken fillets seasoned for about 4-5 minutes on each side until golden brown and cook – cover to create steam and help cook.
  3. If the fillets are too thick, reduce the heat and cook longer until they are completely cooked.
  4. Remove from the heat, let it rest for 2 minutes.

Assembly of light and healthy Caesar (incorporate the sauce at the time of the service):

  1. In a bowl, put the washed and dry lettuce leaves.
  2. Season with a pinch of salt, sprinkle the grated Parmesan and mix well.
  3. Beat/mix the sauce if necessary to emulsify.
  4. Add half of the sauce to the leaves and mix gently to wrap.
  5. If necessary, add more sauce to cover all the leaves,
  6. If you are left with the sauce, keep in a closed and refrigerated container for a maximum of 1 day.

Finishing and assembly:
