Eggplant ingredients:

Pre-repair:
- To simplify the preparation, cook the aubergines before starting to prepare the other ingredients (see the preparation).
- Separate the other ingredients and tools.
- Peel and cut the onions and teeth of the garlic.
- Wash the tomatoes, discard the seeds and cut into cubes.
- Discard the seeds of the finger and the pike of the pepper.
- Wash and dry the green parsley and chives, cut and put aside on paper towels.

PREPARATION:
Cook the aubergines in Airfryer (do this step during pre-preparation):
- Preheat to Airfryer at 180 ° C for 5 minutes.
- Cut the aubergines in half in the longitudinal direction.

- Brush the pulp with olive oil and season with salt.

- Cook at 180 ° C for 10-12 minutes or until it is soft.

Prepare the aubergine pulp:

- Add the cream gradually, stirring constantly, until you reach a creamy and homogeneous consistency.
- Season with salt and pepper to taste.
- Turn off the fire and add the parsley and chives.
- Fill the reserved eggplant shells.
Gratin the aubergine in the airpade:
- Place the stuffed aubergines on the plane basket.
- Sprinkle the remaining Parmesan on each.
- Cook at 180 ° C for 8-10 minutes or until it gratifies. Time can vary according to the dimensions of the aubergine and the power of the airpade. Check the softness that attacks the pulp with a fork: it should easily surrender without crumbling.
Finishing and assembly:
