PREPARATION:

Bacia bread – Cooking of the manoc or Sweet potatoes (in the microwave):

  1. Wash and peel the Manioc or Sweet potatoes and cut into slices.
  2. Put the tuber in a plastic bag with some holes.
  3. Take to bake in the high-power microwave for 9-10 minutes or enough to be soft: it is important to be well cooked so that the puree is homogeneous, without hard pieces.

Kissing bread – Pasta:

  1. When the manoc or sweet potato is cooked, drain them, put a bowl and crush up to a very smooth puree – or use potato pressure.
  2. Measuring the quantity obtained – for every 2 portions 200 g of puree or 1 cup (tea) will be required.
  3. Add the sweet and acid flour, salt, nutritional yeast (optional), oil or olive oil and half water (see quantity in the ingredients)/
  4. Stir until you get a “gnocchi” mass – soft with humidity, but quite homogeneous to model the balls.
  5. If necessary, add the remaining water to give the desired point.
  6. Make sure the dough is correct to make a ball that still attacks a little in hand.

Bull kiss – Model:

  1. Grease the pan (i) and the hands with oil or olive oil.
  2. With the help of a dessert spoon, remove a portion of pasta, shape a ball and host the pan.
  3. Make the same process until the end of the mass.
  4. If you are not cooking immediately, the kiss bread can be frozen at this stage.

Kiss bread – Cook:

  1. Preheat the oven at 200 ° C.
  2. Arrange the bacio bread just modeled or frozen on the sheets with a certain distance, while they grow in the oven.
  3. Bake the pan (i) in the preheated oven and bake until golden brown – the estimated time is 25 minutes for the freshly prepared bread (from + 5 to 10 minutes if they are frozen) – or until they grow and golden (as in the photo).
  4. As soon as they are ready, turn off the oven and remove the rolls: the internal consistency should be “puxa” like that of the cheese bread.
