Homemade bread stuffed with peppers and cheese

  • 2 fresh brewer’s yeast tablets (30 g)
  • 1 tablespoon of sugar
  • 1 cup (tea) of warm milk
  • 1/2 cup (tea) of oil
  • 2 eggs
  • 1 tablespoon of salt
  • 5 cups all-purpose flour (approx.)
  • Oil and wheat flour for greasing and flour
  • 1 yolk for brushing

Filling

  • 1 sliced ​​Calabrian sausage
  • 1 sliced ​​onion
  • 1 chopped seedless tomato
  • oregano to taste
  • 1 cup (tea) of Catupiry® cottage cheese
  • 1 cup of grated mozzarella

Method of preparation

For the filling, in a pan, fry the sausage in its own fat, over medium heat, until it starts to brown. Add the onion, tomato and sauté for 5 minutes, stirring. Remove from heat and season with oregano. Let cool, mix the curd and set aside. For the dough, in a bowl, mix the yeast with the sugar until completely dissolved. Add the milk, oil, eggs, salt and mix. Gradually add the flour and knead with your hands until you get a firm dough. If necessary, add more flour. Knead for 5 minutes and roll out the dough with the help of a rolling pin, on a floured surface, forming a rectangle.

Spread the stuffing kept aside and sprinkle with mozzarella. Fold the sides to the center, rolling it up like a swiss roll. Transfer to a large, greased and floured baking tray, cover with a cloth and leave to rest for 1 hour. Brush with egg yolk and bake in a preheated oven for 35 minutes or until golden brown. Remove from the oven, let it cool and then serve.
