Pig Byteca with ignore puree

Ingredients:
- 4 pig
- 3 chopped garlic cloves
- 1 tablespoon of lemon zest
- Salt and black pepper to taste
- 4 tablespoons of oil
Pure:
- 600 g of chopped ignore
- 2 tablespoons of butter
- 1/2 cup of sour cream
- Gets up to taste
- Chopped chives to sprinkle
Preparation:
- For the puree, put the ignore in a pressure cooker, cover with water and cook for 10 minutes after starting to creak. Turn off, let the pressure exit and open the pan. Drain and knead with a fork
- Still hot mix with butter, sour cream and salt. Reserve
- Season the boot with garlic, lemon zest, salt and pepper
- Heat a pan with the oil, over high heat and fry the boats until golden brown
- Transfer to a plate and serve with the mash with chives
