Macaroni Salad Ingredients
- 1/2 cup broccoli (cooked and chopped)
- 1 teaspoon of chopped yellow pepper
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons of drained and chopped hearts of palm
- 3 tablespoons of grated carrots
- 1/2 cup cooked vine spaghetti
Sauce
- 1/2 pot of natural yogurt (85 g)
- 1 tablespoon of chopped mint
- 2 tablespoons of oil
- Salt and black pepper to taste
Method of preparation
For the sauce, blend all the ingredients in a blender until smooth. In a medium saucepan with a lid, put the sauce on the bottom. Layer with the broccoli, one with the peppers, one with the tomato, one with the hearts of palm, one with the carrot and finish with the pasta. Cover the jar and refrigerate for up to 2 days. Turn the pot upside down on a plate, mix the ingredients and consume.
