If cooking in water, the nutritionist recommends using purple liquid, rich in antioxidants, to make other preparations such as broths and soups. “Another suggestion is to add to the plate, or at least in the meal, a source of vitamin C to improve the absorption of the bean iron. And to preserve the nutrients of the beets, never cook for a long time and give preference to the raw beetroot in salads,” he says.

In moderation – about ½ to 1 unit per day – the beet can be a large ally of health. “In addition to improving blood flow and helping brain oxygenation, it provides even more energy for training and day also maintaining a good intestinal function.”

Who should avoid beetroot?

People with kidney stones should be aware of consumption, since beets contain bones that can bind to the calcium of the urine that form crystals.

“This daily consumption can leave the urine or stool with a reddish color – which is not bad and is completely normal,” explains Vanessa.
