  • 3 fresh brewer’s yeast tablets (45 g)
  • 6 tablespoons of sugar
  • 2 cups of milk (hot)
  • 1/2 cup butter (softened)
  • 3 eggs
  • 1 teaspoon of salt
  • 5 cups all-purpose flour (approx.)
  • 2 1/2 cups creamy guava paste
  • Margarine and wheat flour for greasing
  • 1 yolk for brushing
  • powdered sugar for sprinkling

Method of preparation

In a bowl, mix the yeast, sugar and warm milk until dissolved. Add the butter, eggs, salt and mix. Add the flour, a little at a time, until it forms a homogeneous mass that does not stick to your hands. If necessary, add more flour.

Knead the dough for 5 minutes, cover and let it rest for 30 minutes. Divide the dough into 6 equal parts. Open each with the help of a rolling pin, forming rectangles. Divide the guava paste between the doughs and roll up like Swiss rolls. Weave every 3 rolls, forming two rolls.

Place them in a greased and floured baking pan, leaving space between them, cover and let them rest for another 30 minutes. Brush with egg yolk and take to a preheated medium oven (180ยบ C) for 40 minutes or until golden brown. Let cool, sprinkle with granulated sugar and serve.

  • 1/2 cup (tea) of milk
  • 1/2 cup (tea) of oil

Method of preparation

Beat the milk, oil, eggs, sugar, cheese and flour in a blender until smooth. Pour into a bowl and mix the yeast with a spoon. Pour the creamy guava paste over the dough (1 tsp) and shape the cupcake with 2 spoons (soup). Carefully pour into the hot oil and fry until golden brown. Drain on absorbent paper. Cover with cinnamon sugar and serve.

  • 1 and 1/2 cup (tea) of milk
  • 3 eggs
  • 1/2 cup (tea) of oil
  • 2 cups (tea) of sugar
  • 2 tablespoons of corn flour
  • 3 cups of flour (wheat)
  • 1 tablespoon of baking powder
  • 1 cup diced guava
  • 2 cups creamy guava paste to cover

Method of preparation

In a blender, whisk the corn, milk, eggs, oil, sugar, and cornmeal until smooth. Transfer to a bowl, add the flour and baking powder and mix with a spoon. Fill the cupcake molds lined with paper cups with the dough, leaving 1 finger from the edge so it doesn’t come out. Place a cube of guava in each.

Place the molds side by side in a large mold and take it to a preheated medium oven for 20 minutes or until golden brown. Remove from the oven and leave to cool. Put the guava in a pastry bag with a pitanga nozzle and decorate on top of the cupcakes. Serve immediately.

Method of preparation

First, beat the yeast, milk, butter, 2 eggs, sugar, salt and cornmeal in a blender until the mixture is smooth. Pour into a bowl and add the flour, a little at a time, stirring with a spoon until it comes off the side of the bowl. Then transfer to a floured surface and knead for 5 minutes or until the dough is smooth and slightly sticky. If necessary, add more flour. Then form a ball, cover and leave to rest for 1 hour or until doubled in volume.

Divide the dough into 30 portions, open by hand or with a rolling pin and divide the guava paste between them. Close, shaping the sandwiches. Put in a greased form, cover and let it rest for 30 minutes. Brush with the remaining beaten egg, sprinkle with sugar and bake in a preheated medium oven for 30 minutes or until golden brown. Finally, remove from the oven and serve.

  • 12 ears of green corn

Method of preparation

Remove the corn kernels from the cob with a sharp knife near the cob and blend the milk in a blender. Pass through a sieve, pressing well. Pour the liquid into a pan, add the sugar, margarine, salt and put on medium heat, stirring for 20 minutes or until thickened and shiny. Transfer to a medium refractory, allow to cool and refrigerate for 2 hours. Cover with the creamy guava paste, decorate with the diced guava paste and serve.

Pour into a greased and floured form with a hole in the center of 26 cm in diameter, and take it to a medium oven, preheated, for 40 minutes or until cooked and golden. Allow to cool and unmold. In a skillet, bring the water and guava over low heat until dissolved. Sprinkle the cake, letting it run along the sides, and serve.
