Difficulty: easy

Ingredients for the leek quiche

  • 2 cups of flour (wheat)
  • 1/2 teaspoon of salt
  • 1/2 cup diced cold butter
  • 3 tablespoons of ice water

Filling

  • 150 g of diced bacon
  • 1 stalk of leek, sliced
  • 1 tablespoon of butter
  • Salt, pepper and grated nutmeg to taste
  • 2 eggs
  • 1 can of sour cream (300 g)
  • 1/2 cup (tea) of Catupiry® cottage cheese
  • 5 tablespoons of grated Gruyere cheese
  • 3 tablespoons of grated Parmesan cheese

Method of preparation

In a bowl, mix the flour, salt and butter with your fingertips until you get a crumbly mixture. Add the water a little at a time, beating just to mix. If necessary, add more water. Wrap in cling film and refrigerate for 30 minutes. In a skillet, fry the bacon in its own fat over medium heat, stirring until golden brown. Drain on absorbent paper and set aside. Brown the leek in butter over low heat for 5 minutes and season with salt and pepper. Reserve. Beat the eggs with the cream and season with salt, pepper and nutmeg. Reserve.

Roll out the dough with the help of a rolling pin between two sheets of cling film. Line the bottom and sides of a 24 cm diameter removable rim pan. Pour in the leek, bacon and garnish with tablespoons of curd. Sprinkle with the Gruyere cheese and drizzle with the cream. Sprinkle with Parmesan and bake in a preheated medium oven for 35 minutes or until golden brown. Let cool, unmold and serve.
