Wellington Beef Ingredients
- 1 piece of filet mignon (about 1.2 kg)
- Salt and black pepper to taste
- 4 tablespoons of olive oil
- 200 g of chopped fresh mushrooms
- 2 tablespoons of butter
- 1 chopped onion
- 1/2 cup (tea) of chopped parsley
- 3 tablespoons of cognac
- 3 tablespoons of mustard
- 1 cup (tea) of breadcrumbs
- 400 g of puff pastry
- 2 egg yolks for brushing
- oil for greasing
Method of preparation
Season the meat with salt and pepper.
Heat a pan with oil over high heat and brown the meat on all sides. Reserve.
In a pan, over medium heat, put the mushrooms, butter, onion, parsley, cognac, mustard and sauté for 5 minutes.
Add the breadcrumbs and mix until it forms a paste.
Open the puff pastry according to the instructions on the package, spread the sautéed mushrooms and lay the meat.
Wrap the puff pastry around the meat, closing the sides.
Transfer to a pan, leaving the opening of the dough facing down.
With a sharp knife, scrape the puff pastry into a chessboard, being careful not to be too deep.
Brush with egg yolks and bake in a preheated medium oven for 30 minutes or until golden brown.
Serve immediately.
