What are sheet pan soups?

You may have already heard of “one pot meals” – cooking a dish “in a single pan”: a technique that allows you to use a minimum of utensils. Very often, soups are prepared this way: for example, you can fry hunting sausages directly in a pan, add carrots and onions there, wait until they become soft, pour in water, add potatoes and cook until ready, and at the very end throw in melted cheese for sauces and spices.

Do you think there could be something simpler? It turns out so – and it’s soup on a baking sheet.

To prepare it, we remove the step of frying something – now all the ingredients are cooked together. They should be cut into medium-sized pieces, tossed with olive oil and any seasonings, and placed in the oven for 30 to 60 minutes, depending on the recipe. Then the finished products should be sent to a blender or food processor – and the delicious creamy soup is ready to serve!

  • Arrange cherry tomatoes (700 g), onions cut into quarters on a baking sheet, generously pour them with olive oil (½ cup), sprinkle with salt and freshly ground pepper.
  • Take a head of garlic (trust me, you need a whole one, not just a few cloves), wrap it in foil and place it on a baking sheet.
  • Place the pan in the oven for about 30 minutes until the tomatoes and onions are completely softened. Put everything in a blender.
  • Carefully unwrap the foil containing the garlic and press the contents into a blender. Add a tablespoon of sour cream or yogurt.
  • Add ⅓ cup of vegetable or meat broth, whisk all ingredients until smooth.
  • Taste the soup and adjust the amount of salt. Pour into plates, garnish with basil and, if desired, a little sour cream and serve.

Ingredients:

  • 1 butternut squash, peeled and cut into pieces
  • 2 tablespoons of olive oil,
  • ½ teaspoon of salt,
  • ¼ teaspoon of black pepper,
  • ½ teaspoon of cinnamon,

  • 1 chopped onion,
  • 2 cloves of garlic, chopped
  • 4 cups of broth,
  • ½ cup coconut milk

How to cook:

  • Place the pumpkin, garlic and onion on a baking sheet, add oil and spices, stir.
  • Cook the vegetables for 40 minutes – the pumpkin should become tender and golden.
  • Place the vegetables in a saucepan, add the broth and whisk until smooth.
  • Add the coconut milk, stir, pour into bowls.
  • Serve the soup garnished with toasted pumpkin seeds.

Tips for Making Soup on a Baking Sheet

  • Cut everything into medium or large pieces – small ones can burn, which will affect the taste of the dish.
  • While cooking, cover the vegetables with foil most of the time – remove it five to ten minutes before cooking.
  • Use a whole head of garlic – this gives the soup a chewy texture and delicious flavor.
  • Add cheese – for example, feta, feta and Adyghe cheese are perfectly cooked. The cheddar and parmesan can be put in the blender “raw”.
  • Carefully coat everything with oil, including the head of garlic. This will prevent burns.
  • Of course, salt and pepper are essential, but don’t forget about other spices and herbs. For example, add fresh rosemary to a baking sheet.
