  • 1 cup (s) of grated Parmesan cheese
  • Salt and nutmeg to taste
  • 1 Italian bread without core

Method of preparation

Heat the butter in a skillet over medium heat and fry the leek and loin for 3 minutes.

Add the milk to the melted flour and cook, stirring until it thickens and boils.

Add the cream cheese, sour cream, Parmesan, salt, nutmeg and cook over low heat until a creamy broth is formed.

Transfer to Italian bread and serve immediately.

  • 2 chopped onions
  • 3 minced garlic cloves
  • 2 chopped tomatoes
  • 1 bay leaf
  • 2 cubes of beef broth
  • 1 kg of cooked diced muscle
  • 800 g of boiled cassava in pieces
  • 1.5 liters of meat cooking water
  • Salt and black pepper to taste
  • Chopped green chilli for sprinkling

Method of preparation

In a pan, heat the oil and brown the onion and garlic for 3 minutes.

Add the tomatoes, bay leaf and meat stock and sauté for 4 minutes.

Take the meat and cassava and brown for 5 minutes.

Add the meat broth and, as soon as it boils, cook for 20 minutes over low heat, stirring occasionally.

Season with salt and pepper, sprinkle with parsley and serve.

  • 2 fresh brewer’s yeast tablets (30 g)
  • 2 tablespoons of sugar
  • 1 tablespoon of salt (sweet).
  • 1 cup (tea) of warm milk
  • 1 cup (tea) of oil
  • 1 egg
  • 3 1/2 cups all-purpose flour (approx.)
  • Oil and cornmeal for greasing
  • oregano to sprinkle

Method of preparation

In a blender, beat the yeast, sugar, salt, milk, oil and egg.

Transfer to a bowl and add the flour, a little at a time, until it comes off your hands.

Divide the dough into 4 parts and form 4 balls.

Grease a medium pressure cooker with oil and cornmeal. Put one ball next to the other.

Sprinkle with oregano, cover the pan and let it rest for 1 hour.

Cook over low heat, without pin, for 40 minutes or until golden on the sides. Leave to cool in the closed pan, unmold, sprinkle with more oregano and serve.

  • 1 clove of garlic cut in half
  • 1 1/2 glass of dry white wine
  • 250 g coarsely grated Emmental cheese
  • 250 g coarsely grated Gruyere cheese
  • 3 heaping tablespoons of wheat flour
  • 1 pinch of nutmeg
  • 1 pinch of freshly ground white pepper
  • 2 tablespoons of cognac
  • 1 baguette of Italian bread, diced

Method of preparation

Pass the minced garlic into the fondue pot, or medium pot, add the wine and bring to the stove until it boils.

In a bowl, mix the cheeses with the flour and add the wine a little at a time, stirring constantly until they melt, forming a cream.

Add the nutmeg, pepper and brandy, mixing well.

Bring it to the table over the réchaud. To serve, everyone sticks a piece of bread onto their fork and dips it in the fondue.

  • 1 can of store-bought tomato sauce (340 g)

Method of preparation

Cook the pasta over medium heat with water and salt for 10 minutes or al dente. In another pan put the oil, garlic, onion and sauté over medium heat for 5 minutes or until golden brown. Add the minced meat and sauté for 10 minutes. Add the tomato sauce, season with salt, pepper and boil for another 10 minutes. Turn off the heat, drain the pasta and transfer it to a serving dish. Pour the sauce, complete with a sprig of parsley and serve.

  • 1.5 liters of water
  • 1 vegetable stock cube
  • 2 tablespoons of butter
  • 1 chopped onion
  • 400 g pork loin, cooked and chopped

  • 1 pinch of spicy paprika
  • 1/2 cup (tea) of coconut milk
  • Salt, pepper and chopped parsley to taste

Method of preparation

Place the cassava in a pan, cover with the water, broth and cook for 20 minutes over medium heat or until softened.

Let it cool and blend with the cooking water in the blender until you get a cream. Reserve.

Heat the butter in a skillet over medium heat and fry the onion for 3 minutes.

Add the tomato, paprika and sauté for 2 minutes.

Remove part of the sauté and set aside to decorate.

Add the beaten cassava, coconut milk, salt, pepper to the pan and cook until boiling.

Transfer to tureens, garnish with the stew set aside, sprinkle with parsley and serve.
