World-class gastronomic competition aimed at chefs up to 30 years old, the S. Pellegrino Young Chef Academy 2022-23 Competition has begun. And, in its second phase, the young Brazilian Tabata Bertoni23 years old, she was one of 16 people selected to participate in the September regional finals in Colombia.

The young woman is also tutored by chef Giovanna Grossi, from the Animus restaurant. “When the possibility of having her as a mentor opened up, I didn’t even think twice; I was sure it was her,” Tabatha said in a statement.

The first meeting of the two has already provided the young chef with valuable advice, the result of the experience of the owner of the Animus Restaurante in other scenarios of food and wine competitions.

Tabatha Betoni’s career

Currently working in Petí’s kitchen as a Sous Chef, Tabatha Betoni’s history of gastronomy begins at the age of 15, walking a lonely path, looking for recipes, making mistakes and winning, improving her techniques.

At the age of 17 he enrolled in the SENAC gastronomy course, when he realized how vast and varied this universe can be. Since then, she has searched for different places and experiences to discover his place.

The first, Unique, a hotel with predominantly French cuisine, taught behavior and laid the foundations for Tabatha. Later he went to a butcher, because despite being a vegetarian, the desire to acquire knowledge is greater and necessary.

In 2021 she was admitted to Petí, a restaurant that changes menu every 15 days, where she fell in love not only with cooking and pastry, but above all with creation, making a dish not only innovative, but in fact representative.

In designing the dish evaluated by the jury of ALMA, an Italian cooking school, Tabatha reveals that she has tried not to succumb to the pressure and that she has chosen something that reflects not only her tastes, but who she is.

“If I were a dish, I would be this,” he says with a laugh. “It took me a bit of everything that matters to me.” Regarding the registration process, the Brazilian representative says that despite the requirements, procedures and data sheets are part of the gastronomic routine.

In collaboration with Escola Wilma Kovesi and her mentor Giovanna, Tabatha now dedicates herself, in addition to Petí’s cooking, to training for the competition.

In September he embarks on his first international trip, headed for the regional finals in Colombia, where the four Latin American finalists will leave for the grand finale of 2023.

“Knowing that I was chosen, I’m a woman, I’m young, wow, it took me a long time to believe it. It’s a great honor and I hope to live up to it.”
