Quinoa Salad With Chickpeas
ingredients
- 80 g of quinoa grains
- 1/5 cup of water
- 1 piece of Minas minas
- 1 tomato, peeled and chopped
- 3 tablespoons of olive oil
- 1 tablespoon of white wine vinegar
- 2 cups of boiled chickpeas
- Salt and ground pepper to taste
Method of preparation
Put the quinoa and water in a pan and let it dry over low heat for 15 minutes. After, remove from the heat, drain the water and let it sit for 10 minutes. Meanwhile, in a bowl, put the cheese, tomato, oil, vinegar and chickpeas and mix well. Add the quinoa kept aside and mix well. Season with salt and pepper and put in the fridge to cool. Serve immediately.
Quinoa salad with broccoli and Brazilian nuts
ingredients
- 120 g of quinoa grains
- 1 1/2 cup of broth vegetables
- 200 g of broccoli
- 2 tablespoons of olive oil
- 1 garlic, peeled and crushed
- Salt to taste
- 1/4 cup chives, cut into rings
- 1/2 cup grated carrot
- 1/3 cup of pea tea
- 1/2 teaspoon of paprika
- 1/2 tablespoon of grated ginger
- 1 onion, peeled and chopped
- 1/2 cup chopped parsley
- 1/4 cup roasted Brazilian nuts
- water for cooking
Method of preparation
In a pan, put the vegetable broth and salt and bring to medium heat until it boils. Add the quinoa, cover the pan and cook for 15 minutes. Then, drain the broth and set the quinoa aside. Put the water in a pan and heat over medium heat until it boils. Meanwhile, put some ice water in a container and set aside. After the water boils, add the broccoli and cook for 3 minutes. Then quickly put the vegetables in ice water, drain and cut into slices. Reserve.
In a pan, add the oil and put over medium heat to heat. Add the garlic and brown it. Add the broccoli and salt, mix well and turn off the heat. In a bowl put the quinoa kept aside, sauteed broccoli, chives, carrots, peas, paprika, ginger, onions, parsley and Brazil nuts and mix well. Serve immediately.

Quinoa salad with avocado and spinach
ingredients
- 200 g of quinoa grains
- 4 tablespoons of olive oil
- 150 g of spinach leaves
- Pulp of 1 avocado, cut into cubes
- 8 cherry tomatoes, halved
- 3 cloves of garlic, peeled and crushed
- Salt and ground white pepper to taste
- 2 sprigs of thyme
- Water for cooking and blanching
Method of preparation
In a pan put the quinoa, cover with water, salt and bring to medium heat to cook until soft. Next, drain the water and set it aside. Then put the water in a pan and heat over medium heat until it boils. Meanwhile, put some ice water in a container and set aside. After the water boils, put the spinach in the pan for 30 seconds and quickly transfer to ice water. Drain and reserve.
Put the oil in a pan and heat it over medium heat, add the garlic and brown it. Add the spinach, salt and pepper and mix well. Turn off the heat, put the mixture in a container, add the quinoa, avocado and tomato kept aside and mix. Season with thyme leaves and serve immediately.
