- 1 kg of potato

- 1 yolk
- 1 cup of wheat flour (approx.)

Method of preparation
Heat the oil in a pan over medium heat and brown the meat for 5 minutes. Add the onion, garlic and carrot and saute for 5 minutes or until golden brown. Then pour in the tomato, salt and pepper and cook for 10 minutes over low heat until it thickens. Reserve. Cook whole potatoes in their skins in salted water for 20 minutes or until softened. Drain and peel while still hot. Pass through the still hot juicer and let it cool down.
In the next step, put the potato in a bowl, add the yolk, salt, pepper and flour. Gradually, knead until it comes off your hands. Then roll out the dough on a smooth and floured surface and with a knife cut the gnocchi by 2 cm. Cook in salted boiling water until it floats. Then remove with a skimmer and pour into a medium refractory. Cover with the hot sauce, sprinkle with basil and parmesan. Now just serve!
