Ingredients for Brigadeiro and Rocambole with Passion Fruit:

  • 6 eggs
  • 10 tablespoons of sugar
  • 2 tablespoons of powdered chocolate
  • 10 tablespoons of wheat flour
  • margarine to grease
  • Chocolate chips for sprinkling

Filling:

  • 1 can of condensed milk
  • 1 tablespoon of butter
  • 1/3 cup of concentrated passion fruit juice

Roof:

  • 1 can of condensed milk
  • 1 tablespoon of butter
  • 4 tablespoons of chocolate powder
  • 1 box of sour cream (200 g)

Method of preparation:

For the filling, in a pan, bring the condensed milk, butter and juice over medium heat, stirring until it comes off the bottom of the pan. Let it cool down. Beat the eggs with the sugar in the mixer for about 10 minutes or until you get a light and fluffy zabaglione. Add the sifted chocolate and flour. Gently mix with a spoon. Pour into a mold lined with baking paper. Bake in a preheated oven for 15 minutes or until they have hardened.

Unmold while still hot on a clean and damp cloth, brush the paper with cold water and remove. Spread the cold filling on the dough of the rolls with the help of a spatula. Roll up, wrap in cling film and refrigerate for 2 hours.

For the topping, place the ingredients in a pan and place over medium heat, stirring until they come off the bottom of the pan. Mix the cream and cover the Swiss roll. Sprinkle with sprinkles and serve.
