Creamy Chicken Pie




Creamy Chicken Pie -

Ingredients:

  • 4 1/2 cups of wheat flour
  • 300 g of butter
  • 2 eggs
  • 1 teaspoon of salt
  • 1/2 cup of cold water (approx.)
  • Wheat flour for flour
  • 1 yolk for brushing

Filling:

  • 4 tablespoons of olive oil
  • 1 chopped onion
  • 3 minced garlic cloves
  • 2 chopped tomatoes
  • 2 tablespoons of tomato paste
  • 1/2 jar of drained peas
  • 1/2 can of drained green corn
  • 4 cups of cooked and shredded chicken
  • Salt to taste
  • 1 1/2 cups (tea) of cream cheese

Method of preparation:

Place a skillet over medium heat with the oil and fry the onion and garlic for 3 minutes. Add the tomato, extract, pea, corn, chicken, salt and sauté for 5 minutes. Let it cool down. In a bowl, mix the flour, butter, egg and salt. Gradually add the water, mixing until smooth. Wrap in plastic and refrigerate for 30 minutes.

Roll out the dough with a rolling pin on a floured surface and line the bottom and sides of a 24 cm pan with removable edge with part of the dough. Roll out the filling, layer with the cream cheese and cover with the remaining dough, squeezing the sides to seal and decorating with the excess dough. Brush with egg yolk and bake in a preheated oven for 35 minutes or until golden brown. Turn out hot and serve.

Creamy shrimp pie




Creamy Shrimp Pie -

Time: 1 hour

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 3 cups of flour (wheat)
  • 1 egg
  • 6 tablespoons of cold butter
  • 3 tablespoons of cold water
  • butter for greasing
  • 1 yolk for brushing

Filling:

  • 2 tablespoons of oil
  • 600 g of shrimp
  • 1 chopped onion
  • 3 tablespoons of tomato paste
  • 2 chopped seedless cherry tomatoes
  • 1/2 box of sour cream
  • 1/2 cup of ricotta
  • Salt and black pepper to taste

Method of preparation:

For the filling, heat a pan with oil and fry the shrimp for 5 minutes. Add the onion, the extract and the tomato and sauté for 3 minutes. Add the cream, curd, season with salt and pepper and cook for 2 minutes. Turn off and let cool. For the dough, in a bowl, knead the flour, egg and butter by hand until it forms a wet crumb. Add the water a little at a time to form a paste, if necessary add more water.

Divide the dough into 2 parts and roll it out with a rolling pin. Line the bottom and sides of a pan with a removable edge with a diameter of 24 cm greased with one of the parts of the dough. Spread the filling over it and cover with the rest of the dough, squeezing the sides well to close. Brush with egg yolk and place in a preheated medium oven for 30 minutes or until golden and cooked through. Let cool, unmold and serve.

Vegetable pie




Vegetable pie -

Time: 1h10

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 3 and 1/2 cups (tea) of wheat flour
  • 1 yolk
  • 1 teaspoon of salt
  • 4 tablespoons of butter
  • 3 tablespoons of sour cream
  • 1/4 cup cold water (approx.)
  • Margarine and wheat flour for greasing
  • 1 yolk for brushing

Filling:

  • 1 chopped leek stalk
  • 1 chopped carrot
  • 2 tablespoons of oil
  • 1 chopped onion
  • 1 chopped courgette
  • 2 minced garlic cloves
  • 1 cup green beans (chopped)
  • Salt and chopped parsley to taste
  • 1 cup of frozen peas
  • 200 g or 1 jar of cream cheese
  • 1 chopped tomato

Method of preparation:

For the filling, heat a pan with the oil and fry the onion, garlic and leek for 3 minutes. Add the carrot, zucchini, green beans, peas, tomato, salt and green smell and saute until the vegetables soften. Turn off, mix with the curd and let it cool.

For the dough, mix the flour, egg yolk, salt and butter in a bowl. Add the cream and water, a little at a time, until a smooth and homogeneous mass is formed. If necessary, add more water.

Divide the dough into 2 parts, open with a rolling pin, line a buttered and floured 24 cm diameter pan with part of the dough, roll out the stuffing kept aside and cover with the rest of the dough, closing the edges well. Brush with egg yolk and bake in a preheated medium oven for 35 minutes or until cooked. Wait for it to cool, unmold and serve the vegetable pie.

Creamy corn pie




Creamy Corn Pie -

Time: 1h30 (+ 30min in the fridge)

Performance: 8 servings

Difficulty: easy

Ingredients:

Pasta:

  • 4 cups of flour (wheat)
  • 2 gems
  • 4 tablespoons of margarine
  • 3 teaspoons of salt
  • 1 cup (tea) of ice water
  • 1 yolk for brushing

Filling:

  • 2 cans of drained corn
  • 2 cups (tea) of milk
  • 2 teaspoons of salt
  • 3 tablespoons of wheat flour
  • 1 cup diced bacon
  • 1 tablespoon of butter
  • 1 chopped onion
  • 1/2 cup chopped parsley
  • 1 cup cream cheese (creamy curd)

Method of preparation:

In a bowl, mix the flour with the egg yolks, margarine, salt and ice water with your fingertips until you get a dough. If necessary, add more water. Wrap in cling film and refrigerate for 30 minutes. For the filling, in a blender, whisk half the corn with the milk, salt and flour.

In a pan, over medium heat, brown the bacon in its own fat, add the butter and onion until golden brown. Pour in the pounded corn mixture, remaining corn, parsley and stir until thickened. Remove from the heat, add the cream cheese and let it cool.

Divide the dough into two parts, open it with a rolling pin and line the bottom and sides of a 24 cm diameter removable ring mold with one of the parts, roll out the filling and cover with the other dough, squeezing the sides and removing excess paste. Decorate with the scraps of pasta, brush with egg yolk and bake in a preheated medium oven for 30 minutes or until golden brown. Turn out hot and serve.
