Ingredients for the pot roast with cassava:
- 1 kg of diced ribs
- 3 minced garlic cloves
- Salt, pepper and chopped parsley to taste
- 3 tablespoons of oil
- 1 chopped onion
- 1 cube of beef broth
- 2 tablespoons of tomato paste
- 3 cups of water (approx.)
- 800 g diced cassava
Method of preparation:
Season the meat with the garlic, salt and pepper. Heat the oil in a pressure cooker over high heat and saute the meat, onion and peppers until golden brown. Add the meat broth, remove and sauté for 2 minutes. Add the water, cover the pan and cook over medium heat for 25 minutes, after the pressure starts.
Switch off, let the pressure naturally release and open the pot. Add the cassava, season with salt and return to medium heat with the uncovered pan until the cassava softens. If necessary, add more water. Turn off, sprinkle with parsley and, to taste, serve with rice and green salad.
