Chef Irina Cordeiro’s restaurant is a feast of flavors where the main dish is the love of couscous
Couscous da Irina opened a few months ago in the Vila Madalena district, in Sao Paulo. It is a pink restaurant, full of love and very Brazilian flavors. In the meticulously decorated residence, couscous is served in multiple and tasty versions. Sertão is the darling of the menu. “It’s a couscous with sun-dried meat and cream, originally from a micro-region between Paraíba and Rio Grande do Norte, which has a wonderful gastronomic culture,” explains chef Irina Cordeiro. “That’s where the butter and ricotta come from.” The sun-dried meat is cooked under pressure to the point of shredding it, seasoned with plenty of bottled butter, red onion, pepper and cream. The names of the dishes are great. Rala bucho, for example, has the following description on the house menu: loose couscous with voinha chicken cream, black-eyed pea salad, coriander and boiled pumpkin. Sou praieiro is an option with fish fried in palm oil, crunchy coconut, pickled cucumbers, cilantro, and a spicy sauce called lambão.
To accompany the dishes, drinks like Sacanagem (guava smoothie) or Enemy Caju (made with cachaça and cajuína instead of cashew juice) are good options. At Couscous da Irina there are also desserts richly enriched by the best of the gastronomic history of the Northeast.
