- 2 kg of clean beef tripe into strips
- juice of 3 lemons
- 4 tablespoons of corn flour
- 1 cup (tea) of milk
- 2 bay leaves
- 500 g desalted beef, cut into cubes
- 1 tablespoon of lemon zest
- 2 tablespoons of oil
- 1 cup diced bacon
- 2 slices of sliced ​​Calabrian sausage
- 1 chopped onion
- 2 minced garlic cloves
- 1 chopped green pepper
- 2 diced tomatoes
- 4 tablespoons of tomato paste
- 3 cups white beans (cooked al dente)

Method of preparation:
Wash the tripe under running water, put it in a bowl, sprinkle with lemon juice, sprinkle the cornmeal and rub with your hands.
