You are probably already familiar with the concept of “bean to bar”, which emerged in California in the 1990s, which means from bean to bar. The concept is a success all over the world, especially for those who produce artisan chocolates, with grains chosen with quality criteria.

An adaptation of this concept has begun to gain supporters in Brazil. This is the “tree to bar”, in which the entire production process is carried out by the producer, from the cultivation of cocoa to the production of the chocolate bar. This is exactly what happens with Luzz Cacau, a young Brazilian company born in 2020 and based on the outskirts of São Paulo.

“Our chocolate is not just a product available on the shelf for purchase. It is a family story full of sustainability and awareness of the world, ”says Josiane Luz, founder of the company.

It closely follows the whole process “from tree to bar”, from the cultivation of the earth, to the sowing of cocoa, to the harvest, to the drying of the beans, to the processing and production of chocolate, which is made with only three ingredients.

From Bahia to the outskirts of Sao Paulo

Daughter of a cocoa farmer in southern Bahia, Josiane worked as a manager of a multinational in Sao Paulo and has always heard her complain that cocoa was a loss. Aware that this is a huge market, she saw an opportunity there to take advantage of the business that has supported her family for years.

Josiane delved into almond processing, studied the whole process and when she already learned the subject, she faced a new challenge: convincing her father to change the format of the business he had been in for decades.

The result was positive and Luzz Cacau now has 84 stores throughout the country, an online store for the brand and also for partners. In addition, the entrepreneur has innovated the packaging of chocolates, telling a little about the north-eastern culture.
