A Brazilian study, published in International Journal of Food Studies, compared four different types of oil (soybean oil, sunflower oil, virgin olive oil and extra virgin olive oil) before and after heating. In the study it was shown that it does not form toxic compounds and retains most of its beneficial characteristics.
