  • 1 1/2 cup of wheat flour
  • 1 tablespoon of sugar
  • 100 g of cold butter in cubes
  • 1 pinch of salt
  • 2 tablespoons of ice water

Filling

  • 200 g of sugar
  • 100 g of butter
  • 2 kg of peeled apples
  • Juice of 1/2 lemon

Method of preparation

In a bowl put the flour, salt, sugar and mix. Then add the butter and mix with your hands. Add the water, a little at a time, and knead until it forms a ball. Wrap in cling film and refrigerate for 6 hours.

While it cools, cut the apples into 4 parts and place them in a bowl with water and juice of lemon so that it does not darken. In a large pan, melt the sugar with the butter over low heat. When they are caramel colored, place the apples side by side and let them cook for 20 minutes.

Roll out the dough with a rolling pin on a floured surface. Finally, lay the dough on top of the pan and put it in a preheated oven at 180ºC for 20 minutes. When ready, turn out the cake on a plate and serve immediately.

madeleines

  • 3 eggs
  • 1 teaspoon of vanilla essence
  • 1/2 cup of You of sugar
  • 120 g of wheat flour
  • 1/4 teaspoon of baking powder
  • 100 g of melted butter
  • 1 pinch of salt

Method of preparation

In a bowl, combine the eggs, sugar and vanilla essence. Gently mix until you get a white cream. Sift the flour and baking powder and gradually add to the egg mixture. Mix until well incorporated.

Then add the butter and salt. Leave this mixture in the fridge for an hour. After that, preheat the oven to 200 ° C. Pour the batter into the madeleine molds and bake in the oven over low heat for 10 minutes or until golden brown.

  • 5 gems
  • 350 ml of milk cream fresh
  • 100 ml of milk
  • 1/3 cup of sugar
  • 1 1/2 teaspoon of vanilla essence
  • granulated sugar for caramelizing

Method of preparation

In a mixer, mix the yolks and sugar and beat at high speed until a very light cream is obtained. Stop beating and add the cream, milk and vanilla essence. Mix well with a spoon. Let the mixture rest for 10 minutes.

Meanwhile, put a pot of water over high heat. It will be used for the water bath. With a spoon, remove the foam that has formed on the surface of the yolk mixture. Distribute the cream between the molds and place it on a rectangular pan. Take it to the oven and put boiling water on the pan, carefully, to cook in a bain-marie. Cook for 40 minutes.

Finally, let it cool and refrigerate for at least 6 hours. When ready to serve, sprinkle the entire surface of the cream with sugar. The ideal is to use a culinary torch to caramelize the sugar. However, you can also make the cone by heating a spoon on the stove and putting it in the sugar.
